WOW... I came across some parsnips I must've bought during the holidays, and decided to try making sushi rice out of them. The result was SOOOO creamy and delicious I ended up just eating it all with a spoon, hahahahahaha!
This is from a recipe I've seen online, I'm sorry I've lost the original source, but here's what I did:
3-4 parsnips, cut up
2 tablespoons tahini
a few big splashes of soy sauce
a big splash of rice vinegar (or ACV would be fine too)
about a teaspoon of toasted sesame oil (if you're okay with high raw)
First process the parsnips in food processor till they're well-chopped but not rice-like yet. Add all the other ingredients and process until rice-like consistency.
Adjust seasonings to taste -- YUM!!!!!
Super simple, fast and amazing! Holds together well for nori rolls, or you can just eat as is.
Parsnips are definitely going to be staples throughout the winter! :throwhearts:
