View Full Version : Looking for a recipe that includes coconut

Ok, I know that coconut has been talked about a lot lately, but I haven't really been able to find any tried and true recipes. i'm looking for something like cookies or macaroons, but it's a recipe that has been tried and people liked it. The only one I've been able to find so far is http://www.living-foods.com/recipes/coconut.html which seems simple enough. It does say 'almond extract' - would almond oil be the same thing or no? i have the oil already.

This is the first coconut I've ever dealt with. I opened it up okay, but getting the meat out was a pain. The coconut shell even attacked me and gave me quite a gash on one of my fingers. :(

So, does anyone have any ideas? Thanks much. :)

ooops...you are referring to fresh coconut! Is this young/Thai or the mature/brown one?

If the latter, then it will work with the recipes above...if it's the young/Thai coconut, we may have to provide different recipes.

almond extract and almond oil are two very different things.

almond extract, is much like vanilla, it tastes like almonds in recipes, and is very strong, and made with alcohol.

almond oil is simply oil that is made from almonds, has a very slight taste of almonds, but is actually an oil -- also it isn't raw

Gabriel Cousins tends to use fresh coconut in many of his recipes if I remember correctly. (too lazy to run upstairs to look through his books). I have his two earlier ones. Don't know if he's doing the same in his later ones.
