View Full Version : Amazing Coconut Curry Special

I've experimented a little bit with making curry, but I was never satisfied with what I would create. So I gave it another go yesterday.....SUCCESS. When I lifted the lid from my Vitamix it smelled like I just walked into an Indian restaurant where I used to eat. So I knew I had something worth keeping. I quickly wrote down all the ingredients I used and voila.......now I'm gonna share it with everyone here.

CURRY SAUCE
3 carrots
5 sticks celery "costco sized celery, so if you have an actual head of celery you may need less"
1 orange bell pepper
2-3 cloves garlic
2 african bird peppers "for those that like it spicy, so spice to your liking, omit if you don't want it too spicy"
1 cayenne pepper "spice to your liking"
1.5" chunk ginger
1/4c coconut oil
1t curry powder
1/4t cinnamon powder
1/4t sea salt
1/4t black pepper
1/4t thyme
2t honey
1/8 of an onion

Put all ingredients into vitamix and whizz up until it's nice and smooth.
Makes around 4 cups of curry sauce

Then scoop the some of the sauce over some mixed veggies which are cut into bit sized pieces and mix it up. You can also mix the sauce with your veggies then let it sit at room temperature for a little bit and the veggies become softer. But I also cut up the veggies the day before and had enough in my fridge to make a couple dishes, so that could of also contributed to the softness of the veggies after letting the dish sit at room temperature for a little while. It has a nice texture when the veggies have softened up a bit. I'm sure it could also be done in the dehydrator too.

The garlic is a guesstimation cus I made this garlic mix earlier in the day with 2 whole bulbs of garlic enough coconut oil to cover a pinch of sea salt and cayenne and african bird peppers, then whizzed it in the vitamix. Then I just took a heaping teaspoonful of this mix and put it in. So I'm guessing it's probably 2-3 or so cloves of garlic.

Yellow curry is one of my favorite thai dishes, I've eaten it hundreds of times. This picture has my amalayse flowing. I will have to grab some of them bird peppers and try this.

It's not a properly spiced curry dish till you're sweating. LOL

I haven't made it to habanero yet, but I'm working my way up to it. ;-)

This is so untrue. There are many, many delicately spiced and fragranced curries that don't hurt when you eat them.

LOL. Yeah.....

I find myself scaling back the spice quite a bit recently as it allows many of the other flavors to be noticed and appreciated.

On a side note, I find it kinda odd that when I eat spice I may sweat if I eat a lot of it but my mouth is none the wiser to what is going on. I can taste and feel the spice, but not as much as my body thinks my tongue should. LOL Kinda odd I'm thinking, off to google I go to figure this one out.

I really want to learn to make a few very delicious curry dishes, so I've been experimenting. Mmmmmm curry is sooo good.

I was going to add a side note to the peppers, but I forgot, so I did it now.

As this recipe evolves I'll try to keep it updated here. One idea that I've had is to dehydrate the veggies that I plan on covering with the sauce. I'm kinda curious if I cover dehydrated veggies with the curry sauce if more of the flavor will be absorbed into the veggies as they rehydrate. Maybe cover the dehydrated veggies with sauce, then put it in the fridge over night to let em rehydrate. I dunno.....just something I want to try.

I made the dish again today. I updated the recipe a little bit.

Last night I could recall the flavor of tikka masala. So that's probably what I'll begin experimenting with next. :drool:

Oh, and I also only used one cayenne pepper and left out the african birds cus I'm running low on em. It's hardly spicy at all, but I like spice so it takes a little bit to make a dish spicy for me.

I would love to try this. Can you please tell me what exactly are African bird peppers and where can you find them? It is hard for me to find exotic ingredients. If I can't find them, is there a good substitute?

African bird peppers are just a spicy pepper. Spicier than a cayenne by about two, but less spicy than a habanero.

I found them at a farmers market this summer and I bought a bunch of em and hung em up to dry. They are not required for the recipe, I was just showing all that I put into it. If you are a person that doesn't like too much spice then the cayenne may be enough. People who don't like spice may find that a single cayenne is LOTS, I honestly don't know cus cayenne isn't too spicy to me, so I always add more. You can start with a little cayenne whiz it up then give it a taste test to see if you want more. I like my curries extra spicy so I kick em up a notch with whatever spicy peppers I have.

If you like spicy food then you could check out the scoville scale and try to find a good substitute. http://en.wikipedia.org/wiki/Scoville_scale Sometimes habaneros if they aren't too spicy can be similar to a hot african bird.

If anyone tries this recipe please comment on what you think. I keep thinking it needs something. I may actually go make me some right now.

Sub Cayenne if you like.... not that much difference.
