View Full Version : Juevos rancheros? A long shot...

Hello,

I'm wondering if anyone has a raw recipe for juevos rancheros, or even ideas for a scrambled tofu substitute. Prior to my going raw, my hubby and I had a ritual of going for brunch on Sunday mornings to our favorite little organic cafe and ordering heaping plates of vegan juevos rancheros -- scrambled tofu, pinto beans, and ranchero sauce in sprouted wheat tortillas (all cooked, of course).

I'd like to change our ritual to staying in and making a delicious raw brunch, but this is truly his favorite dish. Has anyone ever tried to replicate such a thing? I know there is no real sub for tofu or beans, but at least something that kinda looks or tastes similar to get him to eat raw brunch in with me instead of going out for cooked?? Even if you just know of a book that contains such a recipe...I'll happily search for it if it helps get more raw food into hubby's tummy. :)

Well, let's see -- you might need to break this down.

The huevos (eggs) were actually tofu scrambler, right? Well, somewhere months ago, someone here came up with a substitute for scrambled eggs. I never tried it, but a few people did and like it (though, of course, with raw, you're not going to replicate the exact flavors).

Then, Alissa's corn tortilla recipe could be used for the bottom.

There are some raw recipes for "refried" beans.

But ... the main thing, I think, is the sauce which is what really makes the dish. That you could experiment with -- just get a recipe for the rancheros sauce used on huevos rancheros and make it using the same ingredients except raw. It would take some playing around on your part, but the good thing is that you'd get to eat it as you're trying it!

This was posted here a while back...have never tried it, but some chimed in to say it did actually remind them of scrambled eggs!
