View Full Version : Fresh mature coconut.... any suggestions?

I've got a mature coconut that's not sweet enough for munching straight as a snack..... I'd like to use it somehow but have never used coconut in any recipe.
Any ideas or suggestions on how I can use this? I was thinking maybe coconut flax crackers? Coconut creme pie? Hmmmm......
If it matters..... I have a new dehydrator and I'm not afraid to use it!! :dread:

you can grate it up and add water leave to "marinate" then add the strained liquid to juices or smoothies or for making a spicy/coconut dressing for thai-style dishes

I just opened a few mature coconuts yesterday. I took some of the coconut and put it through the food processor and then processed some carrots. I put both shredded coconut and carrots into a bowl. Then I processed cilantro, almonds, ginger, gold raisins, garlic, cardamom, salt, and pepper. I emptied all this in the bowl with the carrots and coconut. Then I poured in some apple cider vinegar and mixed it all. Then I put this into lettuce leaves and ate it as a wrap.

There is a tai coconut soup recipe I think in allisa's book sooo good. Sorry I don't have it off hand. Also raw chocolate coconut, seasame seed, agave, make great dehydrator cookies. addicting.

This isn't a sweet coconut, though..... it's not rancid, but it's older and definitely more savory than sweet. I'm stumped what to do with this distinctlly flavorless coconut! I'm thinking either grating and dehydrating for future use, or grating and using in a savory wrap.
(I WILL be trying those dehydrator cookies though, as soon as I buy some cocoa. Haven't tried that yet.)

If it's just not worth bothering with then don't eat it at all. Make everything that you eat the best it can be and if this coconut is less than the best for flavour I'd tend to sling it.

What about a coleslaw. WIth the coconut pineapple and cabbage. Honey and Apple cider vinager dressing. I bet that would be good. I made one before with young coconut and it was good.

then sweeten it. grate it up, mix it with chopped dates and and nuts and apricots and grated carrot and make little carrot cake cupcakes

Dehydrating is a good idea. I dehydrated some extra coconut I have. I like to use some of it in water kefir, and you can use it as a topping in some desserts. Just add some sweetener and you are good to go.

I tangled with old coconuts a couple times. The one I had worked well grated up for a pie crust with dates. Made a huge mess opening it. The water was great though cleansed my system very well.
Then I realized my local health food store had raw shredded coconut, and I'm never gonna be crackin' any more unless its straight off a tree. Well, maybe for the water.
Let another coconut I bought sit around too long and it smelled like coconut rum when I opened it and was covered with mold. Don't let it sit too long!
