Pesto stuffed oyster mushrooms are great. The oyster mushroom looks, smells, and tastes like real oysters. After marinating in Alissa's ginger vinaigrette, they even take on the texture of real oysters.

In addition, shiitake mushrooms taste great stuffed with pesto also. Their pungent, woodsy flavor can really quash any meat cravings anyone may have.

Mother nature has been so kind to offer us a solution for everything we need without the taking of an animal life or the use of animal byproducts.

Here is a picture of my pesto stuffed oyster mushrooms and my pesto stuffed shiitake mushrooms. The oyster mushrooms are the petite mushrooms on the left and the shiitake mushrooms are the larger mushrooms on the right.

Oh, I almost forgot. I wanted to let everyone know I added some cayenne to Alissa's ginger vinaigrette to give it a little fire :)

those look great, although I was never a real oyster fan... but I do love pesto stuffed mushrooms!

But hey, I wanted to thank you for suggesting spinach in pesto a while back. I've made that twice now with about 2/3 spinach, 1/3 basil (for gus's pesto, 2 cups total), and it's fantastic!

Yeah, Gus's pesto made with spinach as the base and then some dried basil added works out great. You can always get spinach, never a shortage of that.
