View Full Version : Dehydrated Potato Cake Recipe/ Raw Comfort Food

Oh my god... I have just come up with the most genious raw recipe! I'm loving this stuff! Dehydrated potato-cakes! I know I tried to do something like this before but it didn't quite work out. The key is to shred the sweet potato (don't use normal potato, they can't be eaten raw) into small pieces first, together with some onion, olive oil, salt and whatever you like and then put the mix into a blender and blend it into a kind of mash. Better yet if you have some other kitchen device able to mash it. But the key is to make it into fine paste, otherwise it will come out crunchy like raw potato. I also added raw honey, cinnamon, dates and vanilla for extra sweetness and flavour, and when out of the dehydrator, added a sprinkle of soya sauce. These are the best potato cakes I've tried! One could even make mash potato the same way. Oh, and also key is to not dehydrate them until dry but leave the cakes/ mash slighly moist. Or you can experiment with this according to your liking.

The other clever realisation was to spoon the mash onto spinach leaves, so that the dough doesn't fall through the holes on the dehydrator trays. Alternatively you could buy the plastic dehydrator sheets but I prefer spinach as the 'oven paper' substitute.

just made them, but being a savory vs. sweet lover and growing up with potato pancakes with chives and sour cream, I made some alterations. I added garlic powder, nutritional yeast and green onion in addition to the olive oil, s & p. I'll report later to report how they turned out.

o.k. mine turned out awesome. I only made one huge sweet potato. I peeled and then shredded it in the food processor. Added 1 green onion, maybe a teaspoon garlic, two tablespoons nut. yeast (should have added 4 to make cheesier), a tablespoon olive oil and salt and pepper to taste. This made about 6 good sized patties and I dehydrated for about 3 - 4 hours. They are wonderful warm out of the dehydrator!!!

second time eating them, I topped them with sour cream (soaked overnight cashews), ACV, lemon and water in blender....tasted like you're eating something very bad for you!!!
