you might find land cress a better bet if you are using soil.
Are you trying to grow it to eat as sprouts or are you trying to grow it into adult watercress?

Trying to sprout it. I had it before where it was long shoots of sprouts so thats what I was hoping for.

I'd do it in a sprouting jar like alfalfa I guess.

It goes all mouldy if I sprout it in a jar. No idea how to do it.

watercress grows in running water in the wild. If yours is going mouldy I would suggest that you aren't rinsing and draining it enough. But it may be that it mostly propagates vegetively which may make the germination of seed less reliable. Do let us know how you get on.

You can find the details for sprouting in most of the threads posted here on it. Details for each type seed can be found at the sprout peoples website A light weight on top of them to provide resistance against growth should help to lengthen the sprouts.
