I recently read that chia seeds are super high in Omega 3s, calcium and protein so I was trying to figure out a way to use them and I came up with this recipe which is similar to one I've seen for flax seeds. The great thing about chia seeds over flax seeds is that you don't have to grind the chia seeds to get the benefits! I've also read that they don't go rancid because they have so many anitoxidants.

The recipe I've been working with is
Lemon zest of at least one lemon
2 Bananas
1/3 c chia seeds

Put these all in the food processor and process until smooth. Spread on a texflex sheet and dehydrate a few hours until it is firm enough to be flipped, then flip it with a spatula (it breaks up at this point) and finish drying!

This is a pic of it after about 1 hour of drying, I actually think there is more than 1/3 cup of chia seeds in this particular recipe so it's a little more seedy than usual! I've been experimenting with adding other things like vanilla, the juice of the lemon I zested and other fruits like pineapple. The lemon zest gives it a strong flavor and the first time my kids ate it they thought it tasted like candy because it was so lemony.

How creative you are! I'm definitely going to try this. Lemon candy? And it's good for you? Brilliant!

I have to admit, this is one recipe I would have never thought up! Way to go!
No one in my family likes lemon zest though, although we do like lemons. Maybe I'll giv ethat a try.

Thanks for sharing.

There are lots of ways to use chia seeds. I mostly add them to smoothies. Another thing that I do is soak them for half an hour and then cut a papaya in 2. Remove the seeds and replace with the chia and then just eat with a spoon.

I'm really boring with chia. I just add to water, let soak and drink down!
