I recently read that chia seeds are super high in Omega 3s, calcium and protein so I was trying to figure out a way to use them and I came up with this recipe which is similar to one I've seen for flax seeds. The great thing about chia seeds over flax seeds is that you don't have to grind the chia seeds to get the benefits! I've also read that they don't go rancid because they have so many anitoxidants.
The recipe I've been working with is
Lemon zest of at least one lemon
2 Bananas
1/3 c chia seeds
Put these all in the food processor and process until smooth. Spread on a texflex sheet and dehydrate a few hours until it is firm enough to be flipped, then flip it with a spatula (it breaks up at this point) and finish drying!
This is a pic of it after about 1 hour of drying, I actually think there is more than 1/3 cup of chia seeds in this particular recipe so it's a little more seedy than usual! I've been experimenting with adding other things like vanilla, the juice of the lemon I zested and other fruits like pineapple. The lemon zest gives it a strong flavor and the first time my kids ate it they thought it tasted like candy because it was so lemony.
