Hi. My first time posting here.

I see jars of "raw" nut butters at the health food store but I can't for the life of me see how they stay fresh without pasteurization. Does anyone have any information on this?

I have made jams and jellies (I'm not 100% raw) and believe me, if I just pureed the berries and stuck them in a jar, they'd be filled with mold in no time flat.

So, what's the manufacturers' trick?

firstly raw doesn't always mean the raw you are talking about.
secondly nut butters are essentially fat and that has different keeping qualities from fruit.

If you want to know for sure you need to consult the manufacturer of the butters in question and ask them or ask people here if they have any experience/knowledge of the companies who make them.
