I recently tried a recipe for mac n' cheese that I didn't love. It was 1 cup macadamias and/or cashews blended w/ one red bell pepper and 1 tsp. salt, served over kelp noodles. I ate about half of it, but really wasn't into it, but didn't want to waste the leftovers. I also had some flax seeds left (maybe 1/2 cup, not enough to make my usual flax crackers) and some sauerkraut that had just finished fermenting (1 head red cabbage + 1 tsp. salt.)
I soaked the flax in a little water for a few hours, then dumped the slimy things right into my mac n/ cheese bowl, and threw a couple handfuls of kraut on top. I mixed them up and dehydrated them... WOW! So, so good. They looked funny while dehydrating because they had whole kelp noodles slithering around in the batter, but I think the noodles added a nice texture. The flavor from the kraut and the sauce is wonderful; I probably won't bother adding noodles next time I make them.
Something like:
1/2-3/4 cup macadamias and.or cashews
1/2 large red bell pepper
1/2 tsp. celtic sea salt
Blended, mixed with
1/2 cup flax seeds, soaked
1 cup kraut (the solids, not much juice)
