I just got a small cooking pumpkin in my CSA share for the week. I have no idea what to do with it now that I am raw ... plenty of ideas if I ate cooked, but not raw.

I really don't like to eat raw potatoes so I don't think that I would like it cubed. I will take out the seeds and dehydrate them when my dehydrator comes later this week, but what should I do with the flesh????

I also have a TON of green beans. Can I dehydrate them till they are crunchy (mmmm, I also want dried crunchy snap peas!)?

I also got yellow squash that I will make chips out of, but I also got red and white potatoes. If I dehydrate them will they get crunchy like potato chips? I don't really like potatoes, but my CSA is going to end soon so I want to dry everything to make it last ...

grate it and add to massaged kale salad. The marinating will help soften it.

use a veg peeler to make ribbon pasta - again marinate it to soften once it's sliced thin.

I would be careful with the green beans. I think it's either the runner bean... one of the types of the green beans, which are toxic.

The thing is whenever you buy green beans at the store, they never say what is the species. So I just stay away from all green beans, except for snap peas and snow peas :)

Would the snap peas and snow peas dry nicely? I really need some dry snacks to take to school with me and since I am there for 6-8 hours at a time I don't want to bring anything cold. My backpack is already about 40 lbs with my laptop and books so a lunch box is out. I think I would snap in two. ;)

Raw green beans are fine ... I think Alissa has a recipe that uses 1 and a half pounds of them!

So as per MT's suggestion I added it to a kale salad and it was pretty good!

I have a lot left over though and I have an idea that I am going to try, but I wanted some input also.

I am going to make a date syrup with some cinnamon and nutmeg in it and then I am going to blend the pumpkin in it until thick but smooth. Then I want to put it in a pastry bag and squeeze it into my dehydrator in jerky like stick/tubes to make a sweet pumpkin jerky!


What do you guys think? I think it sounds tasty!

Jerky sound great.......MD, search out pumpkin hummus recipes here. You might like that.

Something I read elsewhere is that pumpkin can be given to cats to help with the passing or elimination of hairballs. That recommendation was given along with the use of fish oil capsules as well.

I ended up making the pumpkin jerky and it was pretty good. From it I think that I got a basic recipe for some raw pumpkin bread! I am going to make some today! I have already been to the farmers market and got another pumpkin ... I can't wait!!!

Beside the great idea you had,

You still can make a pumpkin pie, yummy. You will find many recipes on line.

Cookies

A pasta, yeap, a pasta with it. Use a spiral slicer to make pasta, add a little bit of sweetener, a little pinch of himalayan salt, either lemon juice or orange juice, you can add a little bit of cold press oil, mix with your hand and dehydrate to warm up. Also, You can mix vegetables with it. I love green oinion and dice tomato, i dehydrate that together. Be creative and add what you want. DELICIOUS. I do my squash this way too.

Here is a suggestion (done with sweet potato, but you can use pumpkin no problem)

Mm, I love pumpkin. I'm going to make a raw pumpkin pie come Thanksgiving. I think I might try out some of these ideas too.. :)
