Well, in my new endeavor to eat lower fat raw foods, I decided to make a taco filling tonight out of raw corn mixed with mexican spices. It turned out really great! I am also thinking of trying to find a jackfruit and making a taco filling out of that.. I got that idea from watching the vegan truck on The Great Foood Truck Race this season (i love that they had a vegan truck as a contestant, and I loved more that one of their on-board chefs was a raw chef!!). I was wondering if anyone else has good ideas for low fat raw taco fillings? I was thinking maybe jicama, but I think something that has sort of a soggier consistency might be a better replica of taco meat. Ideas?

Mushrooms marinated in salsa or Mexican-spiced dressing, or maybe dried veggies (like cauliflower, sundried tomatoes, etc.) re-hydrated in salsa.
For guacamole, you could use just a little avocado blended with cucumber and/or celery.

I use this one (http://www.rawfoodsupport.com/read.php?4,184246) all the time. It's a really basic recipe that I tweaked--I add cumin and/or other Mexican spices; I add lime juice; I add garlic; I add hot peppers ... basically this is a raw salsa that you could use as taco filling or as a salad on top of greens. I always add the fresh cilantro, and I mash up 1/2 an avocado and mix everything all together, which makes it hold its shape better as a taco filling. It is really simple and really tasty.

I use raw soaked sunflower seeds and some adzuki sprouts. I make a pate (I add some lemon or lime juice instead of water to thin it and I leave it a little on the dry side) out of the sunflower and add the adzuki for some "meaty" feeling. I seasonings and some garlic and chopped onion. I know that sunflower seeds aren't super low fat, but I use so little of it in the shells that I use because it is so flavorful.
