My family is visiting. I plan to serve raw dinners at home. I have Alissa' LIVING ON LIVE FOOD at hand although I have only tried a couple of the recipes. Will someone suggest some dishes/dressings/sauces that are easy to make, do not require a lot of various ingredients, and delicious? Are there recipes that will appease even meat-lovers? Thanks in advance for suggestions.

Do her potato salad. You can use cucumber instead of the vegetable she ask for the recipes if you don't have any (Jicama i think). People who eat cook food love that.

Make a simple pate such the mock salmon (delicious again and very comforting)

You can serve a Portobello mushroom with an avocado stuffing (check her book)

Make two three kind of desert (nut fudge, so easy and delicious)

It depends what kind of food your family loves. Do they like fast food style? Italian style, spicy food etc.....? Give us more details and we will be able to help you

P.S Don't forget to make a banana icecream, so easy to make really.

and top the ice cream with chopped raw nuts or seeds and some date syrup  I don't know if the syrup is in her book, but it is awesome!

Thanks for the suggestions. I will check them out.

Raw Angel Mom, I do not think my family has any prejudice against any food style, as long as the food tastes good. I am doing this also for the purpose of compelling myself to learn some gournet raw dishes. So, as long as the dishes are easy to make and delicious, I will try to make them.

Jicama tastes good. But it is difficult to peel. Actually I could not peel it with a peeler. I had to use a knife to patiently cut off its tough skin.

maggiestdaddy, do you eat nuts with banana icecream? I usually avoid eating fruits together with heavier foods like nuts.

You can make a tacco ( i use iceberg salad but you could make a recipe for a shell)

Do a protein dish to go with it, a cheese and a salsa

Protein: any soak nut dehycrated after (1 cup of nut, 5-6 cherry tomatoes, 1 chive, 1 pinch of hymalyan sals or celtic sea salt, fresh herbs (cilantro, parsley, basil or dill), 1 table spoon of lemon juice and tacco spice
Do any salsa recip
Do Alissa tacco cheese

You could do a shepperd pie rccipe or lasagna

Or this lovely recipe from mim

http://www.youtube.com/watch?v=1N-nSVNbeGE

or her kale chips so good, i use salt and lemon instead of tamari sauce very good and tasty and so easy to do

Healthy and tasty dressing salad

I have a hard time finding nuts so not really. I do eat this ice cream with some raw sunflower seeds on top (like a tablespoon)

Raw Angel Mom, does Allisa' lasagna really taste like cooked lasagna? I just could not imagine that zhcchini could taste like noodles.

Something you learn when raw is that texture is at least 50% if not more the key to the way a dish "tastes". I don't know about the lasagne but I use zucchini strips all the time in place of noodles. They are a pretty good replacement. Seaweed spaghetti is also good - by that I don't mean kelp noodles. That is something else entirely; highly processed and questionably raw.

I will share one trick with you to make the zucchini to be even more delicious and tasty then the cook version

Once you do your noodle, marinate them with a little bit of lemon juice, olive oil and himalayan salt (you can add a little bit of sweetener). (couple minute only)

Here is one suggestion for the lasagna ( i never tried Alissa's recipe, if she had it, it has to be great. Alissa is a genius to come up with recipe).

Marinate mushroom slice (celtic sea salt, olive oil, lemon juice ---- more cook version, then use nama shoyu)
Marinate spinach the same way (add green onion)
Prepare a corn cream (they are in season, in vitamix, blend macadamia nut with corn (1 part of nut and 3 part of corn), lemon juice, himalayan salt, green onion and fresh herbs such dill), add water if necessary, but the corn will be juicy and lemon juice
Prepare a tomato sauce (cherry tomato, a little bit of lemon juice and sundry tomato-for more flavour you can add italian herbs and something spicy such as cayenne pepper, garlic or green onion)

Get a round or square form with no bottom (such a cane)

Place the cane on the plate

1 Lare of zucchini noodle
1 lare of mushroom
1 lare of zucchini noodle
1 lare of spinach/green onion
1 lare of zucchini noodle
1 lare of corn cream
1 lare of zucchini noodle
1 lare of tomato sauce

Remove the cane and decorate with a parsley garnish or fresh herbs

This is a suggestion but you can make many style of lasagna remember the trick with marinated your zucchini noodle

MysticTree, I certainly will try zucchini strips. I could not imagine how zucchini could taste like noodles. But cooked noodle is one thing I really miss. So I definitely am going to try a zucchini dish this coming week.

Raw Angel Mom, Thank you for the recipe! The corn cream is a wonderful idea. Do you then put the lasagna in a dehydrater? For how long?

Use a peeler to make them into strips (I use the green part of the Zuc as well btw) then squeeze some lemon juice over them and set aside for a short time while they soften slightly. I'd allow one zucchini per person but maybe more if only having this dish rather than a multi-coursed meal.

I have never tried them with lemon juice and letting them sit. How much do they soften? I just shredded them with this hand tool that I have and put them in a raw marinara. I don't have this dish to frequently because I find the texture of the noodles to be a turn off for me. If they were even a little less crunchy I would like them more.

They soften quite a lot. What is the hand tool you have?

I have this one (http://www.amazon.com/Titan-Peeler-TTPLR-Slicer/dp/B0026AE6FM/ref=sr_1_4?ie=UTF8&qid=1314460623&sr=8-4) and I love it!

It is, but it is VERY sharp! It makes it easy to peel both the fruit/vegetable AND my hand (although I have avoided that so far)!

No, i don't put it in the dehydrator. I don't make a big casserole either, i make a portion as i am ready to eat it, because it get watery.

Here is a youtube for some idea. You can use a mandolin or carrot pillar

http://www.youtube.com/watch?v=SPjm3u-_jFo

You can also visit Mimi Kirk youtube. She has great idea http://www.youtube.com/user/ub52209?blend=9&ob=5
Mimi's lasagna is dehydrated

Do I have to use a manual peeler for zucchini? Can't I just use an electric food processor to make zucchini sticks? Wont' they taste like noodles as well? I am afraid I will never have the patience to use a manual peeler to make zucchini stripes.

Use whatever you have! If I had one, I'd use a spiraliser with the angel hair blade in place.

Food processor will work. It is worth to get Mimi Kirt tool for the zucchini, it does a better job because zucchini a watery and with this machine, they have a nice texture. For hard vegetable, i like Alissa spiraliser, because it comes thin and it is like angel noodle.

Thank you, MysticTree and Raw Angel Mom. I already made mock salmon and a modified calzone. I am very happy with my results, so did two meat-lovers. I will try zucchini-noodles this coming week. And I will pour Raw Angel Mom's creamed corn over the calzone leftover--Hopefully it will come out like a new dish.

T (http://www.rawfoodtalk.com/showthread.php?66072-Raw-Carrot-Cake-with-Coconut-Cashew-Creme)he above is very simple really although not the cheapest thing I could have made. It keeps really well (a week in the fridge with the cake and the frosting separate). My bf who is a cooked foodie says it's the best carrot cake he ever had. Very filling. Suggest you only make half the amount unless you have a number of guests.

MysticTree, i am very tempted to try your recipe. But I do not have raw dates at hand. Do you think I can use raw can sugar instead? And what do you mean by spice? I do not like cinnama. Will dry vanila bean do?

MysticTree
08-29-2011, 12:40 AM
raw cane sugar isn't raw!

But you need the stickiness of the dates or it won't hold together. I used mixed spice. It doesn't make it spicy but it does make it nicer than without. I expect you could use vanilla instead.

MysticTree

It has clove and cinnamon and cumin and fennel and ginger and that sort of thing in it. You can't really taste it but it lifts the flavour in some indescribable way.

Zucchini that has been refridgerated does not spiralize well and is very watery. Try to leave them outafter you buy them.
As to meals I would make a raw taco salad with bowls of toppings. Chopped tomatoes, chopped onions, a bowl of walnut taco meat, chopped avocado, guacamole, salsa. Make a raw sour cream (nope never done it but it exists)
For dessert make Chocolate Euphoria sauce (so awesome) and serve it over raw ice cream.
Make your banana ice cream ,scoop some out,add strawberries, scoop some out and then add cacao to it. All in one processor. So first banana then add the strawberries then add the cacao. I am sure I made that confusing. Top with chopped pineapples and nuts.
Youi can also make a raw Waldorf salad with a cashew dressing.
And don't forget to mae some awesome smoothies or juices to go with it. OR you can simply make a raw lemonade. I love watermelon limeade with agave or honey. You can just blend it and not juice it,

MysticTree, Thanks. I hope I will have time to make the cake.

sprouts2go, thank you for the tip about zuchini. So far I have found that Pates are both easy to make and also most pleasing to my dinner diners. They do not care about weight or health. They only want food that tastes lke cooked main dishes. So salad can serve only as a small side dish for them.
