View Full Version : Know a good salad recipe?

Hey guys! I decided it would be good for me if I started eating more salads- problem is that I cannot stand plain lettuce tomato onion! SO boring! I love dressings, nuts, other little bits, etc in there. So does anyone have a delious salad recipe they'd like to share? The more complicated the better IMO! :)

I love bunches of different kinds of greens with thinly sliced mushrooms, tomatoes, green onion, alfalfa sprouts, avocado. Sometimes I put the raw 'cheezits' on top. Sometimes I put walnuts on it. Sometimes i put seaweed noodles on it. Sometimes I put everything except the kitchen sink in it. :) Corn is good on top as well. I think the variety of greens helps me not be bored. There are just so many different kinds of greens you can have as your base.

We often dehydrate egg plant with oil and salt and eat it with salads but I bet that would be good cut up on the salad as well. Just pull out one of everything in your fridge or from your counter and keep adding until it's pretty. When it looks pretty, I find it generally tastes pretty good. :)

I have two favorites:

Lettuces/avocado/tomato/raw corn/onions/jalapeno pepper with some Bragg's and evoo

Lettuces/crunchy apple/walnuts (or sunflower seeds)/celery/maybe pineapple/grated carrots with some balsamic vinegar and maybe some evoo

Or....some grated carrots with pineapples, raisins or dried cranberries, grated coconut with whatever dressing you like

Spiralize zucchini and/or cukes. Dress with your favorite and add anything else you like. It's a great time of the year most places for both of these. I roll up a whole lot of spinach, chard, beet greens and lettuce and slice thinly to have shreds. Mixes in great. Quinoa that's has been soaked/sprouted is great in this as well.

There is also a couple recipes for massaged kale salad made with avocado and lemon juice to form the dressing. YUM!! When I was starting RAW, it was a staple!

HA!!!!! I've got two foot-long zucchinis sitting on my countertop right now. People at work are begging folks to take them!

Just lately I've been doing a baby spring mix (spinach, arugula, red lettuce etc) with diced red & green peppers, crimini mushrooms, chopped broccoli, radishes & shredded sweet potato. Topped off with a homeade dressing.

I like avocado and grapefruit on a bed of lettuce with raspberry walnut dressing. Also mango and avocado on a bed of lettuce with honey mustard. The dressings that I use aren't raw but I havent searched out a raw alternative yet. I just use a drizzle. These are soooo good!

Do I ever!! Salads are all about a good dressing - and fresh organic produce of course!

One that I've been loving lately is grated zucchini, cabbage, and carrots tossed with raw jungle peanuts or hempseeds. Toss this with a creamy curry dressing that goes something like this (in your blender):

- 1/2 cup olive oil or flaxseed oil
- 1-2 garlic clove
- 1 tbsp turmeric/curry powder
- 1 inch ginger chunk
- 1-2 tsp raw honey or agave nectar
- Rock salt to taste
- Some water or coconut water to blend (depending how thick you like it)

Yum!! Another delicious and simple salad is grated carrots, beets, cabbage (mostly cabbage, but with enough beets for colour and flavour) tossed with lemon juice, olive oil, hemp seeds and salt. Omg this is so simple and yummy....this is what I crave when I've had enough greens. Enjoy ! :)

One that I make that my inlaws love is ...

1 Shredded Zucchini
1 Ear Raw Corn off the Cob
1 Diced Tomato Seeds and slime removed
1 Clove Smashed Garlic
1/4-1/2 Teaspoon Salt (I use 1/4 but some of them like more)
1 tsp cold pressed hemp oil
1/4 Cup Fresh Chopped Parsly

Add all ingredients to a bowl and mix with hands until well combined!
