Does anyone have a recipe for vegan cheese using brewers yeast, cashues & lemon?? I don't know the amounts or the exact ingredients. These ingedients are a guess. Thank U, Nancy

I am not good with measuring but here is what i do.

Soak cashew for 5 hours in the fridge (one pack about 2 cups)

Dehydrate for 5 min plus or more (until dry)

You can use a food processor or blender but i use a juicer with a blank blade and make a butter with the cashew then add the juice of one lemon, and 1 table spoon of nutrional yeast (taste and adjust your ingredient), add a pinch of salt (himalyan is my favorite)

With blender, process will all the ingredient. With vitamix, use the plungor.

Place in a nut bag or cheese bag, place something heavy on top (jar of water) and let ferment for 10-14 hours or overnight.

Enjoy!

you want nutritional yeast not brewers, although nutritional yeast is not raw and not always fortified with b12 (and when it is fortified, I am not sure it's even useable b-12).

I make an even simpler vegan cheese without any yeast or anything. It's just pumpkin seeds, sunflower seeds, salt and herbs. You soak it, grind it and then leave it out for about a day to ferment. It's absolutely cheese! :)

I do similar but add lemon juice also.

Ooh I'll try! Thanks! I make every batch a little different. It comes out almost like cottage cheese if I add a few cashews. I'm sure there would be some really yummy way to make it into yogurt as well but I've never tried.
