It was on this board only a couple of years ago that I saw someone
mention eating corn on the cob. In all my years, I never knew you could eat it raw! And I was hesitant to do so. But once I tried it, WHOA, I was totally hooked!!
And now during corn season, I feel like I am making up for lost time! I cannot remember
who it was who said it when I read it, but thank you, thank you, thank you!!

I didn't know it either and now I LOVE to eat raw corn. I make a "summer salad" with corn, tomatoes, cucumbers, avocados, olive oil, apple cider vinegar, salt and pepper to taste and it is soooo yummy.
I have found that raw is the only way I can eat corn without it bloating me terribly.

It's delicious when it is fully ripe and fresh picked off the stalk. I enjoyed this last week when I was home on the family farm. YUM!

I've always liked raw corn even when I was a cooked food person. Luckily I have always liked veggies and fruit generally.

I just tried this yesterday!
It's funny, how when something is such a cultural standard, so many of us don't even question it as a necessity. Even after I had read about eating raw corn, I thought it must be so hard/tough. I nervously took my first bite and found it to be amazingly tender and delicious.

I thought the same thing. I don't know why I thought it would be hard and dry, but instead, juicy and sweeeet!

Make sure to only get it from a garden, trusted farmer or buy organic. If you're buying none organic in the store it's most likely GMO.

I shred zuchini and add a little hemp oil, garlic powder and pink sea salt and toss it with chopped tomato and raw corn off the cob. It's pretty good!

I go to the farmers market and grab an organic ear and eat it there. They even strip it for you. You have no idea how many other people don't know you can eat it raw! I get many comments as I chew and walk around.

What I've found out in my research as (at least for now) most sweet corn in the supermarket isn't GMO. This may change as Monsanto is promoting GMO seed heavily for the next planting. But... you can find out if you as the produce person at your grocery store what the 'plu' number of the corn is. Conventional (but not GMO) produce is a 4 digit number. All organic plu numbers lead with a 9 and the rest of the numbers will be the same as the 4 for the conventional version. GMO products work the same way except the leading digit will be an 8. See this: http://www.plantea.com/genetically-modified-foods.htm
