I love avocados and I have quite a few in my fridge. I always make the carob, date and avocado pudding. Which I absolutely love.

My baby will eat it too, but she wont eat the avocado when its green. It has to be in pudding form.

I would like to make a pie or something out of them. Does anyone have any good recipes for my avocados? I have three that are just ripe and they should be eaten soon.

Ive been looking through my recipe books and cant find anything that interests me.

Key Lime Pie is good...blend avo flesh with lime juice and honey or agave nectar.

What about the classic guacamole or spinach dip?

You could make your carbo avo pudding and put in a pie shell, of

1/2 cup dates
1 cup nuts

or the lemon pudding which is just like the lime pudding, only lemon.

I don't like avocados, so unfortunately I can't think of anything else.

But, there are many here who LOoooove them so I'm sure you'll get lots of ideas.

You could make creamy salad dressings out of avocados, lemon, seasonings of your choice, etc.

Avocado Raisin Banana Salad with Nut Raisin Pineapple Dressing

Ingredients:
For salad:
1 cup raisins
2 cups diced banana
1 avocado, sliced
1/2 cup pecans, chopped
Fresh green lettuce
Finely chopped cranberries

For Dressing:
Nuts
Raisins
Fresh pineapple juice
Lemon juice
Honey

Directions:
To make salad:
Combine ingredients, mix with Nut-Raisin-Pineapple Dressing and serve on fresh green lettuce. Cover with finely chopped cranberries.

To make dressing:
Grind nuts and raisins. Add fresh pineapple juice, a few drops of lemon, and a little honey.

Heavenly Mashed Potatoes

3 cups cauliflower
1 cup pine nuts
1/2 cup cashews
1/4 cup avocado
1 ear corn

Process to desired consistency.

jamaican spice cubes

3 avocados, firm and ripe, pitted and halved
jamaican jerk sauce

place avocados face down (shell side up). cut two small incisions in back of avocado shell. peel back shell. [do we need this crap on peeling a goddamned avocado?] cube avocados and place in bowl. pour sauce over cubes. gently coat cubes.

place cubes on teflex and pour extra sauce on top. dehydrate cubes at 108 degrees for 1 to 4 hours.

jamaican jerk sauce
1 cup tahini
1 tbsp ginger juice
1/4 cup tamarind
1 habanero pepper
1 tsp allspice
1 date, soaked
3 sprigs cilantro
bottom 3" of scallion
1 tbsp tangerine juice
2 tbsp olive oil
pinch salt
water if needed

blend until smooth, adding water only if needed, making sure habanero is well blended.


From I don't know where:

lemon meringue

1 avocado, skinned and pitted
1/2-1 tbsp hemp butter
1/2 lemon
3 fresh dates or 4 dates, soaked
1/2 tbsp maple syrup
thin half slice lemon (garnish)
hemp nut (garnish)

blend until smooth. garnish and serve.


creamy tangerine pudding

2 cups tangerines
1 medium avocado (~1 cup)

process until smooth, then strain.

Yep! If they're not ripe yet, it's best to leave out on the counter until they ripen. But once they get to ripe or almost ripe, you can refrigerate until ready to use.

Alissa's honey mustard goes great with avocados. I make agave mustard which is Alissa's recipe with agave substituted for honey.

My goodness, that sounds interesting, SamuelWilson; how did you come up with that? I wouldn't have thought to add mustard to avo...very creative!

I like to split an avo, dump a bit of Nama shoyu in the little bowl created by the seed and eat it with a spoon. Very simple, and quick; but yummy.

And, of course, guacamole is delicious, as well as adding to Nori Rolls and salads.

My favorite way to eat an avocado now is to first half it, then remove pit. Then I half the halves (or quarter it). Then I take the quarters and sprinkle cumin on them, then celtic sea salt, then I mist them with braggs. It gives them a mexican int'l flavor, very good. I have also made Alissa's Avocado Cups, but for some reason, I didn't like them as well that way. I prefer Avocado Chutney over the Avocado Cups.
