Ok so here's what he CAN eat besides veggies
all nuts
coconut water / young coconut
berries
apples
so clearly with cashews and berries and coconut i could do something super yummy
I really want to spoil him and I really want to hear some ideas :))))

how about an apple or berry pie? Using pecans and coconut maybe to do the crust, and some super sweet berries or apples for the filling? You could mold it into mini tart pans to make it look extra special. :-)

ok, didn't mean to make you read between the lines for the challenges!
this means NO SWEETNERS, NO SALT, NO CITRUS, NO STRONG SPICES!!
he does do ginger and vanilla!!

i would think that if you blended up some coconut meat in your blender with maybe a touch of the water, and then mixed that in with some pecans (or almonds, but pecans seem naturally sweeter to me) that you've crunched in your food processor and maybe some vanilla, that you could then mold it into a tart pan and fill it up with whatever fruit is the freshest and sweetest. I know if you cut up strawberries and let them sit for a while, they become sort of juicy.. maybe other fruits would do that too? There are also some really sweet yellow peaches at the farmer's market right now that I'd think would make a fantastic tart filling with no additional sugar needed. If your friend doesn't mind stevia, you could try grinding up a bit of stevia leaf and sprinkling it onto the fruit?
