i'm making the carrot cake (http://www.beautifulonraw.com/raw_food_recipes.html) for a rawfood potluck tomorrow at 2:00. I forgot to buy almonds. I have almond meal and wonder if that will work instead? Should I run out to the store and get almonds? How much almond meal would replace one cup of almonds? do you think that would still taste good? It says almond meal for baking and breading. I am soaking my cashews and flaxseed, just started on that, and could use the least amount of time they could soak. Plus, is there anything you would add to make this recipe better or yummier? I also have soaked cashews from last week. How do I tell if they are still good?
