Hi,
I am getting so many tomatoes out of my garden I need to start making things out of it or atleast start to preserve some of it. I have roma, jet star, yellow pear, and german johnson tomatoes. What would you make out of them? Also anything you make could it be dried or frozen? What other ways can I preserve tomatoes? I wanna be able to have tomatoes later on when I actually need them too for a recipe. Here is a pic of some tomatoes there's a lot more. Thanks

Send them to me. :eat Tomato is one of my favorites.
There's tons of things you can do-all types of salads such as chopped cucumber and tomato w/lemon juice & optional spices, tomato & avocado, etc. Tomato & mango soup, tomato & celery soup, chili, cream of tomato soup, reg salsa, Tomato & mango salsa, pasta sauce, dressing, etc. Or you can just sit down to a bowl of them sliced alone or w/spices.

If you have a dehydrator, you can use tomatoes to make wraps.

I assume you are eating some now, as IMO there's nothing tastier than a fresh from the garden tomato!! I just had a couple farmer's market tomatoes for lunch today with basil from my garden, some olive oil, pepper & sea salt .... YUM!!!
But otherwise, I don't have any ideas other than to dehydrate then to use as sun dried tomatoes.

I got even more today. Everyday I go out to teh garden I am coming back with several big tomatoes and a handful of the small ones.

I never have a glut of tomatoes from the garden because I eat them all ... I love tomatoes :D

I have a few recipes in mind so I should have a lot of the tomatoes used. But I wanna start freezing them or drying them so I can use them later.

Tomato wrappers
Ani’s Raw Essentials Makes 4
A delicious red wrapper that has a fruit leather texture, but thinner & less sticky, Great to use to make vegetables hors d’oeuvre” pockets, wraps and rolls. Make sure not to put in more than a tablespoon of agave, or your wrapper will never dry solid but will stay sticky, because agave doesn’t dehydrate fully
3 ½ cups tomatoes seeded and corded
1 tablespoon agave
Place the tomatoes and agave in a high speed blender and puree until smooth. The mixture will be a liquid. Carefully and evenly spread the mixture onto one lined 14-inch square Excalibur dehydrator tray. Dehydrate for 4 to 6 hour at 104 degrees F. until completely dried. No need to flip the wrapper: just peel away the liner and use.
Tomatoes wrappers
Minh's recipe
Cut 6 lbs Roma Tomatoes into 1/4 inch slices and remove the seeds.
4-5 cloves minced garlic,
1 tsp Sea Salt,
1.5 tsp Black Pepper,
2.5 tsp Dried Italian Seasoning
3/8 cup cold pressed Olive Oil.
Put the ingredients into a large bowl and Marinate for 8 hours, and then spread onto a not-stick sheet and dehydrate."

Check out Aleesha's Tomato Juice (Fasting - Favorite Juices sticky) It's fabulous and you can make a bunch a freeze it....then use it as juice, stock for soups, liquid base for savory greem smoothies....
Alissa's marinara sauce freezes well, you can make a bunch of that. Or just have rawsketti for a week with yummy sauce (like I sometimes do... :))
Hmmmm... Dehydrate Alissa'a marinara sauce and use THAT as your wrap recipe!
Alissa's Tomato-Basil Sorbet is DELISH! Have some friends over and serve it in a fancy glass with a basil leaf garnish as an app for your "garden party" :)

Do I got a lot of tomatoes or what? I am gonna be making some salsa and then I will be making a bowl of tomatoes, basil, olive oil, and salt. Then I will make some of everyone else's suggestions.

I know I eat a lot of tomatoes ... that little collection in the photo would maybe last me a week! I only eat them fully ripe though and that I find is the trickiest bit of homegrown ones.

Well the greenish ones are gonna go ripe soon. As long as I see a little patch of red or pink on them I pull them. If I leave them to get ripe on the vine/plant, bugs and/or small animals eat them. When I 1st had a few ripe ones, I was excited, but all were found partially eaten. I lost about 5-6 of my first tomatoes destroyed by bugs/animals. Every now and then I might find an odd tomato here and there with some bites into it.
But ever since I started pulling them early I have not had problems. The non-ripe ones get ripe really fast too. Like in a matter of 2 days the non-ripe ones will be red and perfectly ripe, if I wait just one day they start to get a little squishy.

I blend tomatoes with dates (ratio to suit your taste) and freeze it in glass jars. It's a delicious, super-simple blend that you can eat straight as tomato soup or marinara, or you can use as a base for recipes.
Dehydrated tomatoes keep really well, and if you don't have your own dehydrator maybe you could borrow one for a few days.

I recently got off a 40 day juice fast and did a tomato blend almost every day for supper. Awsome stuff. You can freeze the juiced tomatoes just by themselves and make the blend as you want--just defrost the tomatoes. Aleesha stated that was best as the complete blend did not taste as good when frozen.
4-5 tomatoes
6 stalks celery
1 English cucumber
1/4 med beet (or to taste)
6-10 small stalks cilantro
1 or 2 cloves of garlic
piece of onion
Red bell pepper if you have it--optional
1-2 cups of alfalfa sprouts--optional
1/4 t each--curry, chipolte, kelp granules, smoked paprika (may also add 1/8 t. smoked sea salt if not too sensitive to salt)
1/2 lime--I just hand squeeze on top after I have juiced everything.
I eat this in a bowl with a spoon like Aleesha. Makes a wonderful dinner. If I have the optional items I use, if not it is awsome without, too.
I can do serious damage to a tomato crop just by eating them in wraps or salsa!

Could I substitute the chipotle with anything? The store didn't have any. I have some jalapeno. But isn't chipotle a little sweet?

Jalapeno or cayenne would work. I just use it for the heat, but chipolte has a little smokey flavor, too. All it is is smoked, dried jalapeno.
I found mine at Walmart. :)

I went shopping yesterday and couldn't find fresh, so I got some in a can. But I had a can of tomato paste I wanted to put back and accidentally put the chipotle away. And just today I was at whole foods and never thought about looking for it there. I also couldn't find the kelp granules. I thought at whole foods I could find it, but they didn't have it. Awhile back I bought some dulse granules but now all those things are gone. So I just got some regular kelp and hoping it will work for me as a substitute.
