Hello
I'm from the UK....
I'm setting up a raw/vegan business in central america.....
I would really really appreciate any advice on where on sourcing ingredients etc....
Whether to buy cooking equipment in the city here or in the states?
Any advice - no matter what, would be most appreciated...

Where in central america? I'm going there soon.
Best advice? I'd say (from my time in Brazil helping with my husband's partially raw vegan restaurant) to get very familiar with the local farmers markets, farmers, and shops and get used to making food from there. Things like raw cashews or whatever you can import in are fine enough... but you really don't want to rely on getting things shipped in.
I was surprised by how little I could get that I was used to. Even kale was just not available. I had to make adjustments to the way I did several things... but it was great in any case b/c local and fresh is pretty spectacular.
You're going to have quite the adventure there!!

That is really kind - where I am there is quite a lot of local produce around......

We are probably going to Costa Rica, or Nicaragua (or maybe both). We just want to live by the beach, eat really good fruit and avocados for super cheap, find fun places to go dancing, and surf/swim/sun during the day. Keep us posted on your business. If we happen to end up coming that way I will look for you! :)
