View Full Version : Help! I ate Raw Sweet Potato!

Sooo...
I love sweet potatoes.
The color, texture, taste when cooked sent me over the moon.
Yesterday I tried to eat one raw, and then later read up on them (yup, I leaped before I looked), and it turns out that based on what I read, they are not so good to eat raw. Something about the enzyme inhibitors not being activated in a raw state, making them hard to digest.
Well, Its 5 am and I am feeling kinda funky, and wondering if it has anything to do with the fact that I downed half a sweet potato for dinner.

My question is:
Is there a 'safe' way to eat sweet potatoes in the raw? If not, how do others go about preparing them?

Don't sweat it ... I eat it often as do other raw foodists. I do grate it which may or may not help with digestion. It's delicious and if you like it eat a little.

I spiralize or grate them and put them in salad, I juice them and add to veggie juice mixture, I slice them ultra thin (with a potato peeler longways) add oil and spices, and dehydrate them for yummy crunchies ... and sometimes I've just munched on a chunk. So far I've suffered no ill effects.

I've blended them into a soup and that's probably the best for your digestive system. Others have dehydrated them into fries.

Also, Karyn's Fresh Corner (the longest running raw restaurant in the US) sells raw sweet potato chips that are dehydrated. I've eaten them (in large quantities) and never had a problem.

I was surprised to see sweet potato as an ingredient in a juice recipe. Haven't tried juicing them yet, but I'm a bit skeptical..

I juiced one once. The taste and texture of my juice resembled liquid carpet, but I digested it okay. If your body is a bit sensitive to the potatoes then start by juicing them (in small amounts, trust me!) and then work up to the solid thing? Good luck!
