INGREDIENTS:

12 oz cherries, or 12 oz fresh cherry juice
1/2 cup Irish moss
Stevia, to taste (or whatever raw sweetener you'd prefer)
water

Instructions
Soak the Irish moss overnight, then blend it with enough water to make a smooth gel. Add the cherries and stevia and blend again. Pour into a mold, and refrigerate until firm (about 3-5 hours, depending on humidity, etc.)

Enjoy!

This looks good. Thanks for posting the recipe. I had been wondering how much Irish moss to use to make a jello-like consistency. If you use honey or agave instead of the stevia you could also freeze it and make sorbet!
