View Full Version : Nuts, and Soaking, and Kale chips, oh my!

Hi, I am new. The doctor ordered me on the raw food diet. He said only fruit, veggies, and nuts, then left the room. This is day four. Plan'd a menu, went shopping for staples came home...and now the nervous breakdown needs to be averted.

I've got raw food and some questions.

I soaked my cashews for 2 hours. 4 cups of cashews. How do i make it into milk or whatever? Will it keep? Did i make a mistake soaking all of them? now i read i only need 1/2 a cup of raw cashews to make 2 cups cashew milk. Holy mother of cashews.

last nights dinner i accidentally made enough for a pot luck. it's avacado, tomato burrito lettuce wraps.. the yellow onion in it made it kind of hot, but my kidneys loved it. now what to do, will all this leftover avacado spoil? The flavor is not too good in it, because of the hot onions.

I was just planning on making some creamy mushroom soup? Any tips?

Do I dry the cashews after soaking? They are in the sun now in a window while i cut mushrooms.

I have garbanzo's soaking for hummus, but I bought the kale yesterday to make kale chips. I don't have a dehydrator. I have a warming oven on my stove that would heat at low temperatures. I could go out and try to buy a dehydrator i saw on craigslist. It is also sunny outside or in our windows. What I have for the kale is oops, forgot to soak my sunflower seeds, but soak that, then make this recipe i saw on youtube where i put orange peppers and stuff in with it, tahini, and i am worried i am going to screw it up, it won't turn out right and i will spend the whole week with no food. So I was wondering if someone could stay with me here and answer any random questions that come up?

with the soaked cashew - you can make "sour creme" - whip up in blender with fresh water, and allow to sour on the counter with a cheese cloth over it for 12-24 hours....or add a capsule of cultures...

cover avo mix with lemon or lime juice and cover and refridge....

you can dehydrate in the fridge, or in warm air with a fan.

What a fantastic doctor! This is great news that he is open min on raw food.

I soaked my cashew 5 hours in the fridge, depending of the recipe, you may need to dry them. For kale chips, i am assuming that you don't need to dry them.
