All organic ingredients.
Dinner was pepper squash pasta (grated because I don't yet have a spiralizer).
The salad was made with field greens, granny smith apple, julienned celery, and sprouted wheat.
The sauce was made with:
14 plum tomatoes
1/2 ripe avocado
2 tbsp Frontier organic Italian seasoning
2 teaspoon garlic powder (I'd have used a whole real clove of garlic if I had it today)
2 teaspoon flaked onion (same excuse)
2 teaspoon Frontier basil flakes
1/2 teaspoon salt
All ingredients processed together in the morning, tossed in with the squash mixture, and then left to steep in the fridge until dinner time.
Dessert was squash cookies.

WOW~~~ That looks soooooooooooooooo yummy :) The pepper squash looks so mexicany,, oh,, I want some.
All i have for dinner is some pesto stuffed mushies,, which I thought was going to be totally fab until I see your dinner!!!

Hehe, Jamie. I actually wanted to make pesto stuffed tomatoes but they were out of organic fresh basil so I thought I'd do the squash thingy. I was craving something with a "pasta sauce" feel to it, so just whipped it up. The family enjoyed it, and said if I made it again they'd like it again.

I posted these a few weeks ago, and in another thread, but here you can see a few ways to use your pesto. the tomatoes were indeed super yummy for sure.

rawandnatural, I did a substitution of 2 cups of spinach instead of 2 cups of basil in my recipe for Gus's Pesto. (I also added 1 table spoon of dried basil) It turned out great. From here on out, if I want to make Gus's Pesto, I will not let fresh basil keep me from making it. The hearty, heavy taste comes from the blended pine nuts and olive oil from what I can tell.

You can stuff anything with pesto, so yeah, I just thought of it. I'm hoping to get Alissa's book for Christmas - I keep reminding DH that that is what I want ;)
SamuelWilson, I'll have to try Gus's pesto sometime, but I am a fresh basil addict, and instantly notice when it's missing. But I can improvise when I need to. I have a double batch of spinach (making spinach dip for tonight) so I'll make a pesto type of thing with that for the younger members of my family who aren't crazy about the Indian spices. Thank you very much for the suggestion.

YUMMY!!! I guess I do not have a creative mind when it comes to cooking,,, or uncooking.. I need a recipe..
It all looks so good RP,,,I need to try and expand my mind when it comes to getting creative in the kitchen I guess....

The cookies are processed leftover pepper squash, cinnamon, cloves, dates, then rolled into balls and refrigerated. They tasted like pumpkin pie and were soft. (I don't have a dehydrator)
I don't have VB's book yet, but it's on my wish list.

What does a pepper squash look like??? Geez there are soo many squash varieties that I usually stick to Butternut or acorn!!!

I bought the pepper squash because it was the cheapest of the organic squashes which I saw that day.

I suppose any squash would be delicious. The sauce was very yummy. I can't wait for my spiral cutting gadgets to arrive! Whee!!
