View Full Version : Can someone help me with frozen desserts?

I had visited a raw food cafe in Florida a couple of years ago and was trying to copy a recipe for a frozen tart that I had that was so good. They listed the ingredients so I went from there.
Basically it's blended tahini and frozen berries and agave, put into a crust of mashed dates and nuts, then frozen. The flavors are good, but the consistency is icy.
Is there any way to make a raw frozen dessert like this and have it be more creamy, rather than icy?

Fat helps make frozen treats creamier. Could you substitute a fatty nut, like cashews or Brazils, for the tahini? Or you could do a combination of tahini and nuts if the tahini is integral to the flavour.

Add avocado. We use it in chocolate mouse ... uh mousse? ... anyway, that soft creamy stuff...
And/or, use fresh berries. Frozen berries are already icy so you're blending ice into the mix and refreezing?

Can you freeze avocado with good results? Also I would worry about the avocado becoming discolored, but does that not occur with frozen avocado?
Thanks for the ideas. I will consider blending some cashews with the tahini and see what happens. I used frozen berries because I didn't have any fresh. I wonder if that would really make a difference, though. I could try it.

It's blended with other stuffs so it'll be whatever color you blend it with. Mousse is frozen or fridged. I've made lemon mousse with avos.

This is from Jennifer Cornbleet's Raw Food Made Easy for 1 or 2 People ~
3/4 C. mashed avocado
1/4 C. raw honey or agave
2 Tbs. fresh lemon juice
Place avos, honey and juice in a food processor with the "S" blade and process until smooth. Garnish with kiwi slices and/or berries. Serve immediately.
You can make sherbet with this by freezing for at least 4 hours and allowing to thaw for 15 minutes before serving. It will keep up to one month in the freezer stored in a sealed container.
Substitute key lime juice for the lemon juice for Key Lime Mousse.

I'll probably go with honey on this as I don't really do agave and I have just found some organic, cold collected and filtered honey in my local shop. Just need to wait for an avo to get ripe!

1 ripe banana added to frozen berries is delish. The raw banana adds a nice creamy texture. More like ice cream.
