1 papaya (medium-sized), peeled and diced
1/2 cup cilantro, chopped
1-2 jalapeņos (depending on how hot you like it) seeded and chopped
1/2 tsp cumin
1/2 tsp salt
1/8 tsp pepper
2 TBS lime juice
Throw it all together, mix it up and enjoy.

Sounds very nice. Sometimes I can get really good papaya from a local Asian shop and they are huge so I may use this recipe next time I get one. It's good to ring the changes and I usually just eat them as they are.

You know, talking to my DH last night while I was making this, he said, "In Puerto Rico (he's from there), papayas can get to be the size of watermelons." I want him to take me to Puerto Rico and prove it! Ha!

Sounds like a great dressing for a salad... gonna try your dressing on a salad of greens, tomatoes, maybe some red onions, avocado, green peppers, cucumbers and maybe a few other things. Great dressing recipe and great for my chips too

* 2 pounds papaya (2 preferably pink-fleshed strawberry variety), peeled, seeded, and cut into 1/4-inch dice
* 1 1/2 cups diced (1/4 inch) fresh pineapple (from 1/2 small pineapple)
* 2 scallions, finely chopped
* 1 small garlic clove, minced
* 2 tablespoons fresh lime juice
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
