View Full Version : Almond Milk - Spoils easily??

So does anyone find that their almond milk goes off really quickly? I've read tons of recipes and some state it keeps for up to 5 days in the fridge, but mine NEVER lasts that long (usually 2 days at most), and I end up having to throw most of it out :confused: Any ideas on why/what I'm doing wrong would be appreciated.

have you checked the temperature of your fridge? I've never made almond milk so I don't know what is normal.

What do you mean by "goes off?" Some people think because it separates it "goes off".... separation is normal. If it's smell/taste, well, I utilize it so, I don't expect it to last more than a few days.

Yes, homemade nut milks will separate as they aren't homogenized. Just give it a stir and you're good to go!

If you live alone, like me, you can make smaller amounts of nut milk. I seldom ever make a full recipe of four or five cups. And because I don't use nut milk very often, I tend to make only what I need when I need it. That way I don't have to worry about using up the surplus.

Sorry probably should have clarified, by goes off I mean goes bad, as in smells and tastes sour.

Shona - I don't live alone but my housemates are hardcore dairy fans and wouldn't touch my almond milk with a ten foot pole :) Guess I'll just have to make smaller quantities from now on.

I make enough for several days...don't care for it past three. It's easy to make so I don't mind doing it often...makes my hands feel great too.

I have consumed my raw almond milk after it's been in the fridge for up to a week. Maybe even a few days longer! I don't know what might be going on with yours...do you seal it tightly in a glass jar? Shake it up every now and then?

I usually make a big batch and freeze several jars worth. Then you don't have to worry about it all going bad.

What are you keeping it in?

I originally bought a glass milk bottle, but when it came, it only had a rubber top that lightly sits on that. My last batch of almond milk was too big for just that container so I put some in a mason jar. I used the mason jar first, and all of that was just fine. But the day after I used the last of that, and went to use what was in the milk bottle, it was bad. So maybe it is the container you are using? I'm only using the mason jars from now on!

Hey,

I make almond milk weekly and have no issues. I finish mine in 3 days as i drink a cup every morning. I blend 1 cup of soaked almonds (overnight), 4 cups of fresh water, 8 dates, blend and strain. I then add to sealed glass jar (12oz) and add to fridge and flip it over or shake it every night or so. If it doesn't fill the 12oz jar then i just add water to it to make it full. I never had a issue of it going bad unless i don't drink it. Now if i make it, i make sure i have a cup a day to finish it. I make this in my vitamix. Hope this helps you out.
