View Full Version : mad raw cookies and they are delish :)

I tried raw cookies this weekend, and they taste just like my favorite Larabar - the lemon pie.
Here is what I did:
1 cup raw cashews
1 cup dates, soaked for 4 hours
1/3 cup of lemon juice
enough water to prevent stickage in the Vitamix
blended until I had a paste, then used a cookie scoop to line up the cookies in my dehydrator. Dehydrated overnight at 105 deg F. Placed in the fridge in a container. So simple yet so yummy! Of course you should not have too many of them because cashews are very fattening, but this made about 12 cookies and I have been noshing on one upon rising every morning while I am preparing my smoothie. Just wanted to share!

I can't believe I used to pay so much money for Larabars - seriously all they are is raw cashew + dates. Just by making them in my Vitamix the Vitamix is going to pay for itself in one year just from my larabar making at home :excited:

So was the title supposed to say "made raw cookies" or did you mean "mad" raw cookies? I LOVE the idea of "mad raw" cookies and I think that's what I'm gonna call this recipe in my recipe book, because I'm printing it out now! ;-)

See I love larabars also they are so simple yet amazing. They r pretty cheap where I'm at so I'm gonna keep buying them. Dates r too pricey for me right now but I hope to make my own larabars at home some day!

have you tried an Arabic store? They are quite cheap there...

I am so weird, because I LOVE coconut oil or coconut butter, but I HATE flaked coconut. I think its the texture that gets me. ugh. I bet if you like the flakes though it would be really yummy. I tried making these again last week but instead of adding the lemon juice I added coconut oil and some cocoa powder and they were delish as well. :heart

I don't either much but far worse is dehydrated banana ... I go green just thinking about it lol.

OMG!!!! I made these tonight and after tasting them thought I was in heaven. They almost didn't make it to the D as I kept having to taste and getty make sure they were really ok. I got about 40 cookies out of mine and can't wait till morning. I think I have fallen in love with a cookie. Thanks for the recipe Panda.

I've never had a Larabar..... but yesterday I saw this thread, secured the ingredients and will be making them today.
They sound amazing.... can't wait!!

Just to report back: made these and they are AMAZING. Very delicately flavored and the lemon intensifies with dehydrating.
This is a very soft cookie. I made just over 12 little rounds and let them dehydrate all day and then flipped them over and kept them in with some flax crackers I had going all night -- they stayed very soft and moist.
This is the first raw dessert recipe I've made (aside from banana ice cream) and found it really easy and delish. I don't think I'll be making them often because they're just too easy to over-eat! I'll definitely make them again, though, and will also check out this flavor Larabar.
Bah, now I want a dehydrator. :)
To be honest, I LOVE having one! I mostly just use it for flax crackers though. They're great in place of bread -- either topped with guacamole or for making a veggie sandwich (avocado, onion and sprouts) YUM!
