They may be my favorite fruit at the moment. It is very hot these days and nothing is better than a cold mango. And very little needs to be done - I eat them as is, add some mint, sprinkle salt or chilli, or make salsa and of course smoothies.
I have a Chinese friend and she says according to Chinese medicine, mangoes are a 'hot' and not 'cold' food.
Have you ever tried Pineapple Mango Salsa (http://www.youtube.com/watch?v=PB7tWdSy_ds)? I'd never had before I tried this recipe - wow, is it good -- and it's beautiful! I love mangoes too! *Ü*
Pineapple Mango Salsa - Chef Tina Jo
Can be served with chips, rolled up in a wrap, or simply served on top of your favorite greens. The options are limitless. Whatever you decide, it won't be around long!
1 whole pineapple
3 whole mango peeled and cut into 1/4-inch cubes
1 whole red bell pepper cut into 1/4-inch cubes
4 whole green onion minced
3/4 cup cilantro
1/4 cup lemon juice, freshly squeezed
1/2 teaspoon Himalayan Pink Salt
1 whole jalapeno chiles, stemmed, seeded if desired and minced
1 Tbsp red pepper flakes
Procedure:
1 Peel and cut pineapple and mango into 1/4 inch pieces and place in bowl.
2. Mince the red pepper, green onions, jalapeno and cilantro then add them to the mango and pineapple.
3. Now add lemon juice, salt, and red pepper flakes.
4. Gently toss and refrigerate for 1/2 hour before serving. ENJOY!
Servings: 12 Yield: 12 cups

That looks delicious, thanks. I buy a whole box at asian stores (much cheaper) and some are not ripe - but those have a nice tangy sour taste that goes well with salt.

You are getting plenty of Vit E in those babies. I am getting great ones at the moment as well.
