I don't know if you know what bubbles tea is but its an asian awesome drink with black tea and milk with honey mixed together and they put tapioca jelly balls in the drink and they sometimes have a flavor like coconut and its like a fun yummy drink. I'm wondering if there's a way to do this raw?? On the weekends we'd go to the bubbles tea place as a way of relaxing from a crazy week of school and if i can make a raw friendly version to save some money and gas that would be awesome! Any suggestions?

Use chia seed for the tapioca bubbles methinks.

I love bubble tea too! Chia seeds are a nice sib but they are tiny -- not the huge, chewy tapioca balls you typically find in bubble tea. But they're good anyway!

I have no clue as to how large tapioca balls are, yet soaked, they become chewy and bubbly.

Yes yes Chia seed will plump up and taste almost exactly like tapioca pearl. I order my chia seeds from soap.com but you can find them at amazon or any online retailer.

You might try your local grocery stores for chia seeds. Several of our local stores in rural Iowa carry chia, different brands and sizes. Might be cheaper than paying S & H cost.

The recipe for the frozen chia treats sound good--going to try that one!

Here is one that you might want to try.

This is a sweet beverage reminiscent of the bubble tea drinks popular in Asia. The chia seeds grow larger as they are soaked and have a similar texture to tapioca. The blueberries resemble the big tapioca balls in the bubble tea.

INGREDIENTS | SERVES 1

¼ cup chia seeds

1½ cups Almond Milk (page 21)

1 cup green tea

½ cup ice

1 tablespoon agave nectar

2 tablespoons blueberries

In a small bowl, soak the chia seeds in the Almond Milk. Stir the seeds occasionally during the first 10 minutes. Cover the bowl and continue soaking in the refrigerator for 6 to 8 hours.

Brew a cup of your favorite green tea. Allow it to cool down to room temperature.

In a large shaker cup with a lid, place the ice, tea, agave nectar, and Almond Milk with chia seeds. Tighten the lid and shake vigorously. Alternatively, use a Tupperware container with lid to shake the ingredients. The shaking motion creates the air bubbles.

Place the blueberries at the bottom of a pint glass. Pour the mixture from the shaker over the blueberries and serve.
