Summer veggies are in and my parents keep loading me up with fresh squash from their garden.

Any good recipes? Has anyone made noodles with yellow squash before?

Hi bb ~ Yes, I make the noodles with yellow squash. Sometimes I mix the yellow and zucchini, so pretty! Here's a very yummy 'pasta' salad that I enjoy:

Zucchini Pasta Salad

2 zucchini (or yellow squash)
1 T Italian Seasoning
1/4 t salt
3T extra virgin olive oil
2T apple cider vinegar
1 clove garlic, minced
3-5 small tomatoes, chopped
2 sprigs basil, torn
Deb's additions: 1/2 - avocado, diced (makes it all creamy)
1-2 scallions
Much more basil

Combine dressing ingredients and blend well. Toss with sliced zucchini, stir in tomatoes and basil. Let sit and marinade for 15-30 minutes.

Deb's Note - I slice these on my mandolin, then I stack the slices and cut them lengthwise to give narrower 'noodles'.

Oh, that salad looks yummy! Thanks for posting it.

I mix the yellow and the green often as well. I don't care for the taste of them in chunks but making angel hair pasta or even slicing them with a peeler makes the spices soak in better and I like them that way a lot.

You're sure welcome adobegirl ~ It really is a tasty salad. I've made it for others and for raw food potlucks. It's always a hit. And to think I found the recipe on the back of a pack of zucchini seeds! *Ü*

Here's another recipe that has received rave reviews, but I haven't made it yet. I included the URL, although it no longer seems to be valid. Shoot - because it had a fantastic picture of the dish!

Buttered Noodles - Brigette Mars, 'Rawsome'

4 cups spiralized zucchini
1/4 c. olive oil
1/2 tsp. celtic salt
1/4 c. pine nuts
1/4 c. chopped fresh parsley

Yummy soups:

Zucchini Soup
1 Zucchini
Greens
½-1 Avocado
1-2 Garlic cloves
Cilantro or Parsley
3-4 cup Water
½-1 tsp Salt

Zucchini Bisque
1 Zucchini
3-5 Sundried Tomatoes soaked in oil 20 min.
1 Tbs Olive Oil
1 cup Water

I have shaved the squash , especially if Ihave zucchini and yellow squash into lasgana type noodles.

soak in juice/seeds from 10-12 tomatoes ( used to make the marinara)

set layers of "noodles" ,sauce and chopped veggies in casserole and set in fridge for afternoon to set
