I am hoping this is ok to eat soaked. What can anyone tell me about buckwheat?

Yes! One of my raw recipe books has a couple of recipes for cereals that use soaked and sprouted (1 day) buckwheat.

I have been soaking - and rinsing like mad cos it does get gooey - and leaving it to sit for about 24 hours and I really like it so far. Although I have probably been eating it with the wrong things on a food combining level!

I just made granola with buckwheat. Sproutpeople.org have instructions on their site for soaking and sprouting it. I dehydrated afterwards before mixing with the other ingredients to make the granola.

It's really tasty and crispy. I am glad I found it. Sproutpeople also sell the buckwheat so that is where I ordered mine. I think I am going to have to order more soon. :)

Bukcwheat is so versatile

You can make bread, all kind of baking, cereal, crackers etc...

I eat it, when i need something very heavy.

I love the most the buckwheat greens.

You can also make a rejuvelac

I'm sorry, I don't have time to look it up, but I believe I read that buckwheat greens contained a substance that was not good for you....

what a teaser I am...I'm not even sure and must get off the puter! Maybe someone knows.

But I also use buckwheat soaked, sprouted - with tails only - and dried for ALL kinds of things....

Sprouted Buckwheat is a rich source of :

Yeah, it has toxins and some people advice not to juice or blend it. Then again there is often an over-reaction to natural toxins in sprouts. Ann Wigmore juiced buckwheat sprouts for years and never got sick.

I had bought a pack at the weekend and was soaking some in readiness for positive replies. Then forgot to post the thread til today!

I am loving it sprinkled over salad and I think it would be a good sub for cracked wheat in tabbouleh. Soaked a bit longer and with chopped dates, I guess it would be a passable porridge-type breakfast - although not sure if those two actually combine well!

It is cheap, even under raw, organic labels so I am happy.

I think sprouted buckwheat is the new rice for me.

I don't find sprouting rice all that easy and it moulds easily but buckwheat is so quick and has a cooked grain texture which is perfect.

I've read that too much buckwheat greens can cause sun sensitivity problems, but most people here should be rotating greens so it shouldn't be a problem. I think the person that reported it was eating it every day for months. Horses have huge sensitivities to it and some other animals have been reported to have problems if they have it as a prime green as well.

Also I'm not sure if only sprouting it for 24 hours would lead to the same amount of toxin as the full greens would since seeds and fuller grown plants have different amounts of chemicals. Moderation is always the answer. :)

I actually buy them from my local health food store already pre sprouted. You can get a whole bag for about $3.00.. They are fantastic on salads!

I bet crackers from buckwheat would actually be crispy and crunchy, not chewy! I am on a mad search to find something raw to feed my crispy crunch needs.

Mix the sprouted buckwheat with any vegetable you like, sea salt and dehydrate. The texture come like a typical crackers that i was raise on.

It is yummy.

(kale, carrot, etc... let your creativity kick in)

Also, Alissa Cohen vegetable crackers recipe are very crispy and crunchy.

Do you dehydrate that mixture a second time? It works quite well just mixing the sprouted buckwheat with the other ingredients then dehydrating.

There's a shop near here that sells little buckwheat clusters - basically just sprouted buckwheat mixed with fruits or cocoa etc. and dehydrated in cup-cake holder-things. Very nice with some chocolate sauce on top / broken into ice-cream.

They contain fagopyrin, which causes sensitivity to sunlight. There's a write-up about it here:

My friend drinks cola & smokes and also never gets sick.

If someone eats a varied diet with lots of greens and sprouts - there seems very little reason to incorporate buckwheat greens...especially considering it's possible toxicity.
