I bought an ice cream maker tonight. :woohoo:

I guess these temps in the high 90's will do that to you!

I want to make chocolate mint ice cream this weekend with the some of the mint I have growing in my front yard.

The question is, I found a recipe that is super simple - it includes

soaked Brazil nuts
water
raw coconut butter
vanilla
agave nectar
fresh mint leaves
raw cacao powder
salt
I was expecting the base to be made with cashews ... can I substitute cashews for the Brazil nuts?

And for those of you who have had ice cream made with both cashew nuts & brazil nuts, do you have a preference?

Also ... if you have any ice cream recipes to share, I'd appreciate it. I want to get my money's worth on this ice cream maker. ;)

Also didn't want to plagarize the recipe above, but I found it on a blog called "oodora.com" if you want to check it out.

hi, did you make the recipe? I substitute nuts all the time depending on what I have in my cupboard.
I haven't yet made icecream with nuts yet, keep intending to but never get round to it. I tend to use the frozen banana recipes...

Thanks for answering!!

I got swamped with gardening projects so didn't make it yet, but I'm getting together with friends this Sunday and we plan to make it then. I'll try it with the cashews. :eat

If you really want to get fancy you could try exotic flavors like lavender with orange and vanilla or try and make a raw chocolate chip cookie dough. I haven't gotten around to experimenting with these but when i do ill let you know my recipes, let you see it ,and how it taste :D Good Luck!

The recipe is for chocolate mint ... I made some "brownies" from dates, walnuts & cacao ... I was thinking of adding some brownie bits! :)
