I love hotsauce, but not necessarily the salt in it. Maybe its the vinegar. But I would love to try and make some raw hot sauce. Whether its green, chipolte, or regular. Anybody got any recipes?

Well, if you look at how Tabasco sauce is made, they mash the peppers, add salt and let them age for three years in barrels. The liquid is separated from the skins/pulp and mixed with vinegar. But you might not want to wait so long.
I have not tried it but this is how I would do it. From fresh red hot chili peppers (whatever your favorite is), I would chop them up and put them in a food processor tightly packed. I would then add vinegar just up to the top of the chopped chilies. I would add a pinch or two of salt and then blend away. Then I would strain it through a fine sieve. Adjust the amount of vinegar and salt to your taste. You want it acidic enough to be preservative. If you don't want to use vinegar you could use lime or lemon juice.
You may be able to make them from dried chilies also. I would take whole dried chilies, break them up and soak them for a few hours in vinegar or citrus juice. Then add salt, blend and strain.
I think it is the combination of pepper flavor/heat, salt and vinegar that makes the taste of hot sauce.

Hot "Cherry Bomb" Sweet Sauce

1 cherry bomb pepper
10 cherry tomatoes
4 medjool dates
1 tsp Coconut aminos
2 tsp lemon juice
1 tsp Apple Cider Vinegar
1 tsp Coconut Nectar
1 tsp Cumin powder
1 tsp Turmeric Powder
1 tsp fresh/dried basil
1 tsp Himalayan sea salt
You can of course substitute the cherry bomb pepper with another hot pepper. I've tried Jalapeño and another dried (then soaked) pepper but the Cherry bomb peppers are absolutely perfect in this. This idea came in a dream and then I made it the next day. LOL
