so memorial weekend went to my brothers for a cookout. Took our veg grill, and the favs of marinated asparagus, zuke, portabella, and added experiments with broccoli, quarter heads of nappa cabbage, and eggplant.....lots was left over, and the kids weren't interested in another cookout, or me grilling them on the stove....but I've been being raw, and didn't want cooked veg, but didn't want to waste, either....

So this am, put a little of each in the dehydrator to experiment - for a raw cookout, lol! well it's in the kitchen, so a raw cookin.....the napa cabbage was ALREADY nice and soft and tasty from marinating for 3 days now.

I can't wait to get home, I think it will taste fab.......just hope it doesn't go "too far" while I'm at work....hoping for the zukes to be chips, the eggplant softened into a bready thing for a sandwich, and the others to just be savory and tender to chew on.....wish me luck!

I love to see nothing is going to waste. Your description of 'savoury and chewy' makes me want some.

Well it was a mixed bag....

The portabella and napa cabbage were great - but not too different from the marinated state.

The asparagus was fine, more tender than just picked, but not as tender as actual cooking.

The broccoli got a big fail on the first bite - very dry and weirdly chewy/rubbery, but it needed thorough chewing and after i was done, I though it was good, just not what I expected...

zuke stayed wierd and chewy - I think the zuke and asparagus had a bit of a sour - I'm thinking of spoiling taste.....too long in the marinate perhaps....
