.... Leeks ??

I absolutely loved leeks when SAD

Had them in soups and also fried in butter or oil on their own or with mushrooms. All I can seem to find raw for leeks is soup. Anyone have any other ideas? Would they be too tough/chewy to use in salad?

I'd be grateful for any suggestions 'cause I found a couple of beautiful bunches that I just couldn't resist. Organic leeks around here are usually $5.99 but these were on special for $2.79 so now they're in the fridge.

I don't find them too tough or chewy to use in a salad - I do it often! I simply slice them nice and thin. Enjoy! *Ü*

Marinate in olive oil overnight and seasoning (salt, soy sauce, whatever you fancy), and dehydrate till limpy, would be my maneuver...

T-Bird, I love the term "limpy" I know just the texture you mean :heart

Gab, Raw leeks straight make my teeth squeak! I usually add a dressing to soften the squeak down.

I really appreciate the input. Done deal.

Going to make a big batch of cauliflower couscous for supper and slice in really thin leeks. After marinating in the fridge for a couple of hours it should help soften or limp 'em up a bit... and... reduce the squeeky tooth factor (lol). Plus it'll add some more flavour and lovely colour to the white cauliflower, red tomatoes and deep green parsley.

Now I can't wait.

Going shopping tomorrow and if I an get more at that great price I'll try marinating and dehydrating as well.
