Does anyone know if there is anything I can do to fix my eggplant bacon that turned out too salty? I would hate to waste it.

I would suggest soaking it and then re-hydrating it.

If you haven't already, you might try it a piece or two in a sandwich or wrap - not all on it's own. I thought mine was too salty, but when I put it in a BLTA wrap, it was fine.

I agree with Lani.. when you put it in a wrap, it doesn't taste salty anymore. I also thought mine was too salty until doing that..

Very much. If you make the pancakes too.... pancakes and bacon! The first time I made the bacon, I read the recipe wrong and made it too salty as well.

we don't have a tradition of bacon and pancakes over here ... more a big breakfast fry-up with things I can't list here lol

Probably don't have a tradition of eating raw food either, eh? For many here, pancakes are an occasional thing yet, raw pancakes and eggplant bacon? Very cool that folk have figured a way to do that.

Doing something different is always fun.

when and if I get a dehydrator I'll give it a go.

It is pretty similar to bacon! I tried a piece before it was dehydrated and the seasonings alone on it made it wonderful and savory like the flavor of bacon, but then the dehydrating process seemed to make it taste like overly salted bacon. Thanks for the suggestions though! I am looking forward to that BLT!
