i just planted a ton of beets about 10 to 15 days ago and they are suppose to be ready in sixty days . i would love some recipes to try out . i will be juicing quite a few of them but would love to try some other recipes without fermenting . im pregnant and that smell kinda gets me quizy . thanks .

If I don't juice them, I shred them and add curry, honey (could probably use agave) and a little bit of apple cider vinegar. Let it sit for an hour or so, so the flavors can join.

This isn't really a recipe, but recently my favourite way to eat beets is cut into chunks with a sprinkle of pepper & a dollop of raw hummus on top.

If you find you have a surplus harvest that you won't be able to consume before spoilage sets in, you can chop, dehydrate, and grind the beets to powder, which can then be added to smoothies, on top of salads, to other recipes, etc. It becomes sort of sweet and earthy tasting. You can add a small amount of food grade diatomaceous earth to the beet chunks as you are grinding them to help reduce caking. If it cakes too badly it may need more drying time.

Shred them and use in wraps or on top of salads. Love them in both. I can only enjoy in juicing if I use a small chunk or it seems to take over the juice.

Sliced thin for ravioli wrappers are also very good. I think Alissa has a recipe in her first book for a beet salad. Would probably be good sliced very thin and kind of pickled and lightly sweetened with maybe some thin onion and a dash of clove. Hmmm. Nice picnic idea for this Monday's Memorial Day holiday.

thank u all so much . those are a lot of good ideas . i really like the one about chopping the beets up and d. them so u can grind them down to add to other foods later . beets are a natural cleanse and i know thats why u are suppose to mix them with other items when u juice them . they are very powerful . thanks again .

I actually bought some beet powder already made from Frontier....But it's better if you can make it yourself. And I just love the DE addition to keep it from caking. Great idea! I use the beet powder to color things all the time...making my kids' smoothies more pink, you can even make pink raw cookies, frosting etc....

There was a beet crepe that looked really good in this raw Valentine's contest I entered. I don't remember the number, but she was on the far left of the page, maybe one or two rows down.

You could make beet crepes and store in the freezer.
