Hi all!
I would like to make a carrot cake for my birthday tomorrow. The only problem is that the recipe calls for 1 cup of coconut and my husband does not like coconut. I would like to make something we can both enjoy. What do you think I could substitute for the coconut? What about dried apricots?

I hate to do this to you, but how is the coconut used? Is it used shredded as a "DRY" ingredient to dry out the cake, so it is more cake like?
Or is it to be used as part of the base of the cake, like cashews could be used? as a base?
I think, without knowing anything about your recipe, I would sub a nut, like cashews, or almonds, that is my first impulse.

Yes, I agree. If it's dry you'd want to sub a dry ingredient like nuts or dried fruit.
If it's the meat of a young coconut, which is wet, you might have to sub almond butter or avocado or something of that nature.

It calls for 1 cup of dry cocounut, so I think if I use 1 cup of dry apricots shredded up it should be ok (I hope).
I actually wanted to make the chocolate cheesecake recipe but I don't have all the ingredients so I will try this one instead.

If you're going to use dried apricots please make sure they are unsulphered.

Hi everyone!
I just wanted to share with you all. My cake came out really yummy, I was so impressed. I made a sweet almond frosting to go with it and we had a side of banana ice cream. Thanks for all your help!
