I make cucumber water. Sometimes add mint.... which becomes minty cucumber water.

I love cucumbers just as is but also finely sliced with fresh dill and lemon juice and sea salt.

I love thinly slicing cucumbers with tomatoes, sweet onion, cilantro, lemon juice, olive oil (not much!) salt, pepper & cumin. Tossed together - yum! One of my favorite salads.
If you have a V-slicer or mandoline, it makes prep time a snap for this salad.
Have you tried sea weed? This is one of my favorite salads: (my tweaked version) Arame does not taste sea-weedy either! This is from the Renegade Health Show - Ann Marie Gianni, a couple years ago...
Cucumber Arame Salad - Deb's tweaked version
1. oz of Arame
2 English cucumbers, peeled
2 tsp. sea salt
1 red pepper, diced
1 small red onion, diced
1/3 cup apple cider vinegar
2 Tbsp oil (I used 1T each Olive and Hemp oil)
pinch of pepper
Soak arame for 45 - 60 minutes. Slice cukes using thinnest blade on mandoline. Sprinkle sea salt on cucumbers for 45-60 minutes to release juices. Discard soaking water from arame. Chop arame and add to cucumbers. Whisk the vinegar and oils together. Add all other ingredients and toss!
Make this in the morning for supper - it's better tasting the longer it sits.

Chunky Cucumber Tomato Soup (like a mild salsa)
1 Cucumber
1-2 Sm-Med Tomatoes
¼ Lemon, Juice
½ -1 Garlic clove
Blend tomatoes & lemon juice on low. Add in rest of ingredients. Eat or chill for 10 min.
Spicy Option: Increase garlic, add hot pepper or onions

Green Smoothie
1 cuke (I use about half)
golden delicious apple
1 inch ginger root
juice of 1 lemon
4 stalks celery
2 handfuls spinacy
2 cups water
Blend. Chill.
Or leave out the water and juice the other ingredients.

I use them as dip chips for raw hummus--Majestic brand. Yummy.
I also make RawFoodRealWorld's pineapple cucumber gazpacho.

I make this drink in my vm with them.
1/2 cucumber
1 cup spinach
1/2 cup blueberries - You can do strawberries instead to
1/2 cup water

use them as crackers
diced with apples and cabbage
seed them and fill with "taco meat" and quacamole

I make a cucumber salad:
Slice cucumbers thinly and sprinkle with sea salt and mix around well. Leave it for an hour or two (or 15 min if you are starving like I usually am, lol).
Rinse cucumber slices well and squeeze out as much water from them as you can. The longer you rinse, the more salt will be gone from it. The cucumbers should be "wiltyish."
Add sesame oil, chopped garlic (I put in little processor so they are tiny), sesame seeds and cayenne pepper. If needed, you can add more salt. It will depend on how well you rinse them whether or not you will need it. Sometimes I add green onion, sometimes not.
The longer this salad sits, the better the flavors are, but we usually make it for a meal and scarf the whole thing.
We put them in nori sheets along with pickled radish sometimes or by itself, or sometimes with mung bean sprouts.
You can make the same salad with spinach. It's yum!

Oh man, adobegirl, that sounds great. Can't wait to get some cucumbers in my garden.
I just ordered a case from a local organic warehouse though, until then!
