Hi there,

Does anyone have savory recipes for young coconut meat? -(aside from egg salad) I would love to hear about them. I have a bunch of coconuts to use up!

Marinade strips of the meat in olive oil, lemon juice & some kind of soya-like sauce (tamari, braggs, miso etc). When it's had a few hours soaking - sprinkle on some spices of your choosing (I like salt, coriander, black pepper, some lime jest & cayenne pepper) and dehydrate for a few hours.

It can be dehydrated for quiet a long time to make coconut-jerky, but I prefer to eat it after only a few hours once its warmed up slightly. Actually...it's never reached the point of becoming jerky caus' I can't stop eating it fresh out the dehyrator :)

Mmmmm, sounds good. I don't have a dehydrator but it looks like I could also skip the dehydrating and just eat after marinating...YUM YUM:drool:

I make savouryu sauces like a raw Tartar sauce by blending young coconut meat with water, salt, garlic, lemon juice etc and using this as a dip for veggie and other savoury things.

That is if the coconut meat can be saved from goign directly in my mouth!

Coconut meat is a lso a good base for raw curries.

What about making a wrap with them (blended and then dehydrated in circles) and then stuff them with savory ingredients?

Scyn are you talking about the young jelly like meat of the coconut or the hardened white meat.
I am making fresh coconut milk every day and have loads of leftover shredded coconut even after dehydrating some for dessert bases.

Any ideas anyone?
