Hi Everyone!
I'd like to gather a list of salads that are distinctive - so I don't feel I'm eating the same thing every meal!
So far - here is my list
Garden salad - greens and such as toms, cukes, celery, pepper
salsa salad - chopped toms with cilantro and the salsa ingredients,
cole slaw
cucumber salad.
do you have any salads to add to the rotation? I usually do the garden salad but get so antsy, and the others seem more time consuming....as I eat tons....but worth it for variety......
Any ideas I haven't considered?

garden peas and various sprouts and radishes and avocado and water chestnut if you can get them from the green grocery section.
Spring onions (scallions), herbs such as lemon thyme, fennel (the frondy stuff as well and the bulb in the veg section), basil.
Green beans, Broad beans, sweetcorn
How you put them together is really up to you though.

I make a raw version of this salad that originally I had at a restaurant and it had contained cooked nuts and cheese.
Butter lettuce leaves (5 to the plate is a nice portion)
Tomato slices
Cucumber slices
Snipped chives, green onions or red onion rings (if using red onion, soak in water with ice for an hour to remove the heat/sweeten them up)
Chopped pecans (you can also make a raw version of the candied ones)
Any raw cheese would alwso be good on this.
Spinkle a nice balsamic vinegrette over and serve. Can use other ingredients to suit your tastes, too. Maybe skip the tomato and cucumber and put avo slices.
Nice thread; will be watching for ideas to shake up my menu, too.

There are some good suggestions here. I have been into the fruit/greens mixing lately.
I mixed up this salad the other day and it was rather good:
jicama
orange
cilantro
bell peppers
cucumber
lime juice

Apple and Endive Salad! Just made this on a whim tonight from a recipe I had bookmarked a few months ago. Delicious, though really more of a winter salad, it was exactly what I needed this evening.
1 apple, diced
3 belgian endives, thinly sliced on the diagonal
dressing:
1 T honey
1 T dijon or wholegrain mustard (not raw)
1/4 c unseasoned rice vinegar
3 T EVOO
1 t walnut oil (not raw, at least not the kind I used)
garnish generously with chopped walnuts and pomegranate seeds

My current favorite is diced jicama, avocado and red onion. Good as is or with a little oriental type dressing. I've added fresh pineapple and mango for a treat as well. Doesn't sound like much but it sure is interesting...
This one takes a bit of planning (it has to marinade for at least 24 hours).
Equal mix of broccoli, cauliflower and carrot all chopped into 'smallish' pieces. Mix with your fave dressing (I use a simple mix of olive oil, lemon juice and garlic). Put into the fridge at least overnight so the flavours can blend. Take it out of the fridge at least an hour before eating 'cause it's best at room temp.
This'll keep a few days in the fridge.
Enjoy! :woot: :woot:
