View Full Version : You Have GOT to try this choc. pudding!!

Wow! A friend of mine posted this recipe on her facebook page. I tried it. I love it!! It is sooo good I just had to share. Hope you like it:

1/4 cup almond butter
1/4 cup agave
1/8 cup water (maybe more maybe a bit less)
1/8 cup cacao powder or cocoa powder
1 medium ripe avocado
1 tbsp coconut oil
1 tsp vanilla extract
small pinch of salt

Put all of it in a food processor and then enjoy. Just to let you know, I think it is even better if you let in sit in the fridge for a bit before eating, the texture will be somewhere between pudding and p-nut butter. It is oh so good!!

I LOVE avocados. But strangely enough I cannot eat one when it is a "pudding."
I tried and just could not eat it.

same here. They make me wanna hurl when blended into soups or puddings. BUT, the same effect of delicious chocolate pudding/mousse can be achieved without the avocado. I've done it and it's awesome and no weird avo icky! LOL

And actually, I've tried even simpler methods, like without the vanilla, salt or coconut oil. Some almond butter and cacao, ground into a powder with either some type of runny sweetener, like honey or agave or coconut syrup, or with some dates, is great. Basically, I discovered through trial and error when attempting to make fudge balls, that I could make a mousse-type dessert with these ingredients in different proportions than when making balls.

Definitely better if it sits in the fridge for a bit. made something similar to this a few months back and it was very similar to SAD pudding I had as a kid. Refreshing and rich.

That's the strange thing about this pudding. Right after you make it, there is an avocado taste, BUT after it sits in the fridge for awhile...no avocado taste. Trust me! It's GOOD!:eat
