I was just gifted with a pound of jerusalem artichokes! Any ideas on what to do with them?

jerusalem artichokes aren't like regular green artichokes. :p Not the green flowery ones with petals you eat, I love those though and their yummy hearts...
jerusalem artichokes are a root, looks like a ginger root actually, only white on the inside, kinda watery and crisp. Thought of making chips out of them to eat with a dip, but I've got a whole pound!

stephbkr, oh ok, you mean a sunchoke. I got you now. How about this raw sunchoke soup recipe...
Cream of Sunchoke Soup
2 C diced sunchoke
1 1/2 C cashews
1/2 onion
1 clove garlic
Add everything to blender and blend adding enough water to get the right consistency. Then add celtic sea salt and black pepper to taste. I also add a little cayenne.

I've read they can be used as a dipping apparatus, just like jicama.

stephbkr, yeah, I like cayenne. They sell 2 different levels of hotness at my health food store. I buy the hottest one. I also like adding diced jalapenos to most of my dishes also. It helps to up the hotness level.
