What to do with almond mayo?

I made some of this yesterday, from a recipe off the internet. It's nice, but I have more than a whole cup of this on hand. What can I do with it before it spoils in the next day or two? I can't see using more than a tablespoon or so on something. Help! I'm usually pretty creative but I'm up against a wall with this one!

I wonder if you could turn it into Ranch Salad dressing? I love Snowdrop's recipe. Do you think it could be frozen in an ice cube tray successfully? *Ü*

Salad dressing. Variety of fruit/veggie salads.

Thanks - The coleslaw sounds like a good idea - I have both red and green cabbage on hand, and some mint leaves!
I'll have to try freezing some of this and see if this works too.
Even with the salad ideas, it will still only use a little bit, since I tend to go a little easy on added fat to foods.
