What to do with huge pineapple

I'm scouting through previous posts, but I'd hoped someone has some good ideas for what to do for my Easter meal with one very large pineapple. I'd like to use it for some type of dessert or salad.

I'd really appreciate ideas and recipes.

I love pineapple but this idea just popped into my head. You could trim it to look like an egg. Then hollow out the inside and fill it with fruit salad. It would be like melon bowl, only its an pineapple bowl egg.

Actually I kinda wish I hadn't eaten the giant pineapple I had this week. Wait, no, glad it ate it, it was delicious.

Blend it with banana and make "pudding?" I've never made it with pineapple ~ just mangoes, papaya, dragon fruit but, I'll bet it'll be good. Add some chopped coconut.

If you have some sweet crusts or neutral flavored, maybe make a cheese for the base and make it a fruit pizza. Could use just pineapple or a variety. I know I'd like something like that.
