I was making Living pizza:eat last night and had some soaked cashews left over and I started to make some more cashew cheese with it and next thing I know I had an amazing dessert that my entire family (all 12 of them) went nuts over so I just had to share what I did.
1/2 cup soaked cashews
juice from 1 & 1/2 lemons
1 t vanilla
3 T agave or raw Honey
a pinch or two of salt
(I also added 1/4t natural lemon extract)
I used my magic bullet to whip this up into a dreamy liquid :drool:
In the big food processor I processed
2 cups of almonds till very fine
1/2 cup golden raisins
1/2 cup coconut
1-2T coconut butter
pored in the dreamy liquid and processed until it all stuck together in a ball or raisins are all incorporated really really well.
I spread this out in a glass pan and put it in the freezer to set up. I will make this again but I think next time I will make balls rolled in coconut because it was a bit difficult to get out of the pan because it was a bit sticky.:sad:
Everyone said it reminded them of lemon meringue pie, just in a bar. The lovely yellow color was also a nice change from everything that usually has brown in it. I don't have a dehydrator so I am not sure if they would have been better dehydrated.
