View Full Version : canning/preserving raw foods?

I'm fairly new to the raw food concept, but am finding it rediculously awesome! I have been watching documentaries, and reading all over the net. I do have one question at this point.

Is there a way to can or preserve raw veggies? I have the opportunity to stock up on a great deal of this type of food, and this appeals to the emergency preparedness mindset I have, but I dont want a ton of it rotting before its eaten.

Thanks for the advice, and its nice to bee here- cant wait to learn more!

I did work in a canning factory in my late teens and cans have to be sealed properly and then brought to a high temperature and held there for a prescribed time to kill all of the bugs in there.
If this is not done they swell up and explode.
Dehydrating and freezing are probably the easiest way.

Another thing to look into would be fermenting.

I thought I saw a good thread on here the other week about using the FoodSaver attachment for canning jars. I can't seem to find it right now. Here is another thread (http://rawfoodtalk.com/showthread.php?t=58344&highlight=foodsaver)regarding FoodSaver usage that might be helpful.

Thanks for the info, everyone!

I'm hoping to find something that will let me have fresh crisp salad greens year round. Unfortunately, adding heat to, or fermenting leafy greens makes them all droopy.

The food saver idea shows some promise- worthy of further research.
